Cakes are one area of gluten-free baking for which there are really many lovely options available already. Therefore, we choose to bring you things that are harder to find in the DFW area. So, our selections will differ from some of the options you’ll find elsewhere. These are options that will fit different occasions and, hopefully, make your eyes light up and make you feel awash with glee.
Whole cakes.
These are multiple portion cakes, that will generally be adapted from or inspired by French classics. We strive to bring you different cakes, special cakes that merit being included in life’s quieter celebrations. Options will change year-round.
Individual cakes.
Tea cakes, things to accompany a lovely cup of tea, coffee or cocoa… These are the little treasures that go with moments of peace and self care. Enjoy these in precious quiet moments, with your bestie - or even in a rush, on the go…

Chocolate savoy-style crunch cake. (Original)
The Savoy region of France is in the southeast of the country, in the Alps. The classic cake from that region is traditionally a light sponge cake, sometimes baked in layers but often times baked in pans to suggest the mountainous landscape that inspired this dessert. This version of the savoy-style cake (Gateau de Savoie) is elevated with the addition of multiple intensities of soy-free chocolate, nuts, a crunchy exterior and light but chewy crumb, as well as both a lucious dairy-free milk chocolate filling and a dark, rich ganache glaze. This is a lovely, complex cake to savor. Gluten-free, dairy-free, soy-free. Does contain nuts, coconut, and eggs.

Galette des rois.
JANUARY SPECIAL!
Galette des rois is the original kings’ cake that originated in France, to be enjoyed during the period of the Epiphany. It has been adapted regionally within France with versions that include puff pastry, brioche, or cake and either nuts, fruit or cream, and is enjoyed repeatedly over the whole month of January.
Be sure to make time to enjoy it at least once this January!
Option 1: The classic puff pastry filled with frangipane. Made from scratch - gluten-free and soy-free.
Option 2: The classic version from Provence made of brioche, perfumed with orange blossom and candied fruits. Made from scratch - gluten-free, nut-free, soy-free.

Mocha savoy-style crunch cake. (Nut-free option)
With an equally pleasing combination of textures and flavors to the original nut-filled version, the mocha version uses candied cocoa nibs in place of nuts. Still dairy-free, gluten-free and soy-free; the ganache glaze (not pictured here) is available dairy-free (but with coconut) or with dairy.
Does contain eggs, dairy as an option.

Canelés de "Bordeaux".
Canelés de Bordeaux have a long and rather interesting history in France. They are individual baked pudding-pastry hybrids, formed in decorative molds and known for having a light perfume of rum. “Bordeaux” has been put in quotes as we much prefer the untraditional, apple-based perfume of Calvados (apple brandy from Normandy) here. The texture is crisp on the outside and satisfyingly dense and rich on the inside with the scents of vanilla and calvados adding to the symphony. Free from gluten, nuts and soy. Contains dairy (but a dairy-free version is in the works).
